Homogenized Milk, Cream & Coffee Creamer (Almond, Cashew, Coconut, Hemp) | Vegan, Paleo, Keto
hi everyone and welcome to my channel intoday's video I'm gonna show you a few
different recipeswe'll start with plant-based milks
including almond milk cashew milkcoconut milk and hemp seed milk I'm
gonna show you how to make themhomogenized so they never separate as
they sit in the fridge and I'm alsogonna share with you a recipe for vegan
cream coffee creamer and half-and-halfalright let's start with the milks first
things first soak the nuts or seeds thatyou want to use for the plant-based milk
the milks I make most frequently at homeare almond milk cashew milk coconut milk
and hemp seed milk almonds and cashewstake the longest to hydrate about 8 to
12 hours coconut and hemp are fine afterabout two hours drain and rinse the nuts
and seeds and add them to a blender withsome fresh water and blend now you don't
want to be draining the coconut and hempseeds because they don't contain any
phytic acid or enzyme inhibitors whichis why we are soaking the nuts and seeds
in the first place one more tip use ashigh-quality ideally organic ingredients
as possible as you might suspect thetaste of the milks reflects the taste of
the nuts and or seeds you use
depending on the nuts you might need tostrain the milk you can use cheesecloth
or my favorite and nut milk bag I findthat soaked cashews and hemp break down
completely so you don't need to stay inthe milk almonds and shredded coconut on
the other hand do need straining
now the milks look great but if you haveever made homemade nut milk you know
that it's tends to separate as it sitsbecause the fat from the nuts and the
water we added separate to make sure itdoesn't happen you will need to use an
emulsifier I use sunflower lecithinwhich is not only an emulsifier but also
a supplement with many health benefitsadd the sunflower lecithin into the milk
and blend once again for at least aminute or two so the lecithin is
perfectly blended with the milk
now what if you want to make vegan creamhalf and half or even vegan coffee
creamer well you've got two options youcan either increase the nut to water
ratio so instead of the classic one cupof nuts to four cups of water you could
do one cup of nuts to 2 cups of water oreven one cup of water or you could heat
up the milk bringing the milk to atemperature right before a boil will
sicken the milk almost instantaneouslythe one thing I want to mention is that
the best that you can use for vegancoffee creamer or half-and-half are
cashews and that is for a few reasonsthey are mildly sweet high in fat and
they are more acidic than say almonds orcoconut I talked about why this is
important on my blog I will leave a linkto the blog post as well as the recipe
in the description box below so how muchdoes the milk second well it depends on
how long you keep it on the stove ittakes just about a minute to get it to
half-and-half consistency if you keep iton the stove for a few more minutes you
will get the consistency of heavy creamand that's it hopefully this video

we've got four types of plant-based milkhere almond cashew coconut and hemp seed
milk and as many of you know henna isnot a vegan however he does not drink
regular milk so I make a lot ofplant-based milk at home because I use
it for baking for cooking for drinkingand another reason why I make a lot is
because Tana actually does not likestore-bought plant-based milk do you
want to tell them why I find stories nothey're too oily they're too slippery
across the palate where when you makethis at home you control the amount of
oil that's in there and I think that itbeing fresher you get more texture and
more taste so if you can do it make itat home which the nut seed milk nut milk
bag yeah comes in handy for that so Iwould say my preferences for this one
would be coconut milk is the best onemaybe because it's like what I'm most
familiar with but that's my firstpreference then it would be almond milk
it's more neutral so the coconut milk isslightly sweet in a really nice way the
nice pleasant taste to it no bitternesswhatsoever
so the almond milk is the most neutralmm-hmm it would be the best one to bake
with I would say or a Trank or no thecoconuts of the string the almond milk
would be my second favorite it's themost neutral then the cashew it's very
sweet slightly earthy and the hemp seedif you asked me to tell you out of all
these milks which is the mostdistinguishable flavor it's they have
seed milk it's very very earthy likedefinitely you can tell you're drinking
absolute milk with that one so itapproaches bitterness than most
it doesn't quite get there but theaftertaste is approaching there so that
would be my preferences so coconut firsthemp seed milk last I would go cashew
milk first or almond milk I like boththen coconut milk and then hemp seed

It's creamy, delicious, and doesn't separate when you let it sit in the fridge. Another benefit of making plant-based milk at home is that you control the consistency. Want to make vegan cream or vegan coffee creamer (half-and-half) at home? There are two methods for making vegan creamer. The first thing you can do is increase the nut to water ratio. The usual ratio for nut milk is 1:4. So, anything higher than that will yield thicker milk/cream. The second thing you can do is keep the nut to water ratio at 1:4, and then heat the milk. Bringing the cashew milk to just under a boil for a few minutes permanently increases its viscosity. The advantage of the first method is that the cream stays raw.
